Having nurtured and developed a love of cheese at the UK's Neal's Yard Dairy over 16 years, I took the big and scary decision to try my hand at making cheese. I swapped the bustle of London and the retailing world for the calm and quiet of rural England. First stop, Cumbria in the North West where I make cheese with Martin Gott at Holker Farm Dairy using milk from their 90 or so Lacaune sheep and 6 Dairy Shorthorn cows. These are my adventures in cheese, thoughts on cheese and general cheese inspired musings.
