5 Great Recipes of 2012 from an Occasional Cook

I am fairly upfront about the fact that I don’t cook very often. So, why am I naming the 5 best recipes I’ve come across in 2012? Because I really, really like to eat. So, without further ado, and in no particular order…

Heinen's (Ohio)

Stephanie (our publisher) and I went to Cleveland this past weekend to work with Heinen's, a fantastic supermarket chain that's recently opened its first store outside of Ohio, in Chicago. We were there for a massive cheese & beer event for Cleveland Beer Week on Sunday, which Heinen's coordinated with Culture, 15 U.S. brewers, and 20 cheeses. It was an astounding success...more to come on that. This blog is about HEINEN'S.

Bourbon Coffee Cabinets

Some would argue that the season is over for frozen desserts but I say coffee ice cream all year round! Fresh dairy and quality coffee are always readily available. Also pie season is upon us and à la mode is always à la mode.

Personally, I prefer my ice cream blended into a thick, creamy beverage. To the rest of the world it's a frappe or a milkshake but where I'm from, Rhode Island, we call them cabinets and we specialize in the coffee variety. I grew up drinking this heavenly treat at Delekta's, a mom and pop pharmacy seated on Main Street in Warren's sleepy town center. Delekta's makes their own coffee syrup and serves your beverage half in a classic soda pop glass and half in the malt mixer it was made in. A perfect pick-me-up for a bad day or a...well, actually I think these are perfect for any day, any weather, any mood.

Growing Up Foodie: Susanna's Hello

When I was in elementary school my classmates and I were asked to stand in front of the class, introduce ourselves, and tell everyone our favorite kind of pizza. Most of my classmates chose pepperoni, many picked cheese, and, one kid said olives. When it was my turn I looked to my peers and said, “Hi, my name is Susanna and my favorite pizza is Al Forno's Margherita pizza.”

This introduction is much better suited to the Culture community than to my eight year old classmates. For those of you who don't know, Al Forno is a world renowned restaurant in Providence, Rhode Island and it is the birth place of the grilled pizza. The margherita pizza is always on the menu and it never disappoints.

Heat, Robiola, and Erin Carlman Weber—A Trip to Formaggio Kitchen

Earlier this summer, I attended the Taste of Cambridge and came across some delicious cheese samples from Formaggio Kitchen. I made a mental note to visit the store, and set out many weeks later to make the journey.

Since I had never been to the shop before, I had the choice to either drive my car or make use of public transportation. Fearing the absence of parking spaces in the city, I chose to walk the 20 minutes from Harvard Square, which was a big mistake in the blistering heat that day, especially when I realized Formaggio Kitchen isn't exactly in the most central area of town. There were parking spaces galore.

A cheese revealed. First impressions of Jasper Hill's "cheese in training"

So let's get right down to it... last night I opened three cheeses from Jasper Hill. Each came wrapped in brown paper so aside from the rough shape, all of us receiving these new cheeses had no idea what to expect.

First Impressions

What greeted us were three samples, each obviously the same cheese yet... not... exactly.

Paired nicely with Pinot
The heat is on

Honored to be among the testers of Jasper Hill's new cheese!

Hi everybody! My name is Chris and I write the Artisan & Farmstead cheese blog Wedge in the Round: http://wedgeintheround.com/

Someday I hope to own my own shop. For now I eat, write, eat, eat and write a little then eat more cheese. I enjoy shooting pics of cheese, food and wine in general.

I'll be blogging my impressions of Jasper Hill's new cheese here at Culture. I cannot say thank you enough to Culture and Jasper Hill for selecting me to be a tester this year.

Three generous wedges arrived yesterday and I'm about to dive in for the first time. I'll let you know my first impressions soon.

Cheers!

Chris

Apples and Cheese

Well I guess you can say I was lost in the woods for awhile and the summer ‘heat’ got the best of me. Now that things have cooled off a bit, I’m back in action and getting all kinds of ideas for blogs.

Fall is one of my favorite times of year- the cool crisp air, being able to wear cozy sweaters and slippers, and enjoying fall’s seasonal food such as squash and apples.

We order apples by the bushel at the cheese shop I work at and they (as some may know) compliment cheese beautifully. The many different varietals are overwhelming. You got your McIntosh, Gala, Empire, and Honey Crisp, and lesser known varietals such as Roxbury Russets, Cox Orange Pippin, Mutsu or Northern Spy. Each of them have varying flavor and texture profiles.

Apples and Cheese
Who can guess the varieties?
(L-R) Montgomery's Cheddar, Shelburne Farms Cheddar and Cabot Clothbound Cheddar.
Spiced apples getting ready to be pied.
How sweet!
Apples mixed into an arugula salad with cranberries and chevre.

New favorite things 2.0

Following in Stephanie’s footsteps…my favorite things in 2010!

Cypress Grove Chevre’s Purple Haze – YUM, I started eating it after reading Anya Firisen’s piece on lunch box cheeses and now I eat it like an addict

Annie’s cheddar Bunnies – cheezits got nothin’ on these, I think Kate Arding might agree

Daelia’s biscuits for cheese – so tasty! I especially like the hint of black pepper in these…quite delicious. They are available at Whole Foods, I believe.

Red wine – trying to educate my palate – 500 red wines (featured in this Winter issue’s Gear section) = great, simple resource

Ho ho ho

Please, everyone: at this time of year, be extra nice to your cheesemonger. And your butcher, baker, and everyone in the retail food industry maker. Because, as we all know, holidays are all about eating! And everyone wants the best of the best at the best price and the exact right time. It's hard to make it all happen for each and every person, but we try very hard!

Starting today, the true holiday food shopping season is upon us. If you, like so many of us, are having cheese as part of your holiday weeks ahead, try some new things and let your monger steer you towards what's great, what's going to last until you need it, what will please your picky sister as well as your own stinky cheese habit. And don't worry too much about amounts--this is one time of year that I encourage a little bit more rather than less. It always gets nibbled on, late night or midday lunchtime. And cheese is healthier than cookies.

That's all for now. Back to the counter!
