Udon Miso 'n' Cheese: A Japanese Spin On Your Favorite Comfort Food

We're always in the mood for Mac 'n' Cheese, but it's nice to try something different every once in awhile. Enter: Perennial Plate's Japanese interpretation of everyone's favorite American comfort food. Just a few ingredients transform the Japanese standbys, udon and miso, into an unexpected cross-cultural fusion. We'll skip the sushi takeout next time and make our own Udon Miso 'n' Cheese instead!

I came across this Udon Miso 'n' Cheese concept while experimenting for an event last fall in which a few non-Japanese chefs got together to make Japanese food. While messing around with the idea of udon risotto, I discovered that miso, butter, parmesan and wheat starch taste just like Kraft Macaroni and Cheese (in a good way); by adding a little Cortez Bottarga it got fancy.
