Smokey Roasted Chicken Tacos with Spicy Goat Cheese Queso
Molten queso dip has to be one of the finest guilty pleasures the food world has to offer, and here it gets a creative twist by incorporating tangy goat cheese. In this recipe from How Sweet It Is, chevre is stirred into a mixture of sauteed jalapenos, garlic and milk, then spooned over spicy, smokey roasted chicken tacos. Tart like sour cream, creamy and rich like nacho cheese, it's the perfect thing to make a simple taco shine. (The spicy chicken doesn't sound half bad, either.)
I found those two things – the chicken and cheese sauce – to be so flavorful that I kept the toppings pretty simple with some avocado, red onion, tomatoes and extra crumbled goat cheese. Because no matter what you tell me, there can never be enough cheese in the universe.
