A Mexican Cheese Champion in London
Peckham, London is one of the last places you'd expect to find makers of Mexican cheese, but that's exactly where Gringa Dairy is located. To boot, the dairy's head, Kristen Schnepp, is neither Mexican nor English -- she's American. A childhood in California's Central Valley is what gave her the love of queso fresco and the like, and she's proud to be offering the citizens of London something different to add to their dinners.
When people ask why I make this kind of cheese, my flippant answer is: "No one needs another cheddar." But the real reason is that I was raised among Mexicans and their cuisine, and I have a real passion for it.
