In the book there's an "all-goat blow-out" cheese board that I have served many times. There are so many fabulous artisan goat cheeses--both imported and coming out in the United States--and yet so many people are goat-cheese averse. When I introduce folks to Humboldt Fog or Midnight Moon or Bonne Bouche they experience revelation.
