Now, let’s talk everyday cheddar. Like the kind that you’ll want to use if you’re making our Classic Macaroni and Cheese from the school. Whatever you do, do NOT use artisanal cheddar for this recipe, or really any time you’re cooking. That’s a waste of great cheddar, and the structure of the cheese will actually end up making a chalky, granular mac and cheese sauce. Not good.
