Four judges, including two Dallas chefs, taste-tested pimento cheese from markets and stores across the Big D. Some were too salty, while others ended up being the consistency of glue. Turns out the simple cheese-and-mayo spread is not so simple after all.
The panel looked for good, balanced flavor and the right ratio of creaminess to chunkiness. “It needs to have a little texture,” Blaskovich said. “We’re not looking for queso.”
