Cottage Cheese Gets a High-Brow Makeover

Poor, under-appreciated cottage cheese: while foodies scour cheese counters for the latest artisan cheddars and triple-cremes, the soft curds in the plastic tubs are left to languish in the dairy aisle. But thanks to a number of artisan cheesemakers producing high quality versions, cottage cheese may soon enjoy its own heyday.

Traders Point Creamery in Zionsville, Indiana is one of the few well-known cheesemakers producing high-end cottage cheese. They begin with gently pasteurized whole milk, which is cultured, skimmed, and stirred by hand, then sold in small glass jars. In addition, Cowgirl Creamery in northern California makes high quality, small batch cottage cheese.
