A Cave of Wonders in Greensboro, Vermont
Jasper Hill Farm in Greensboro, Vermont is an epicenter of cheese-making innovation. Mateo Kehler and Andy Kehler are the cheese virtuosos behind the company, which they founded in 1998. After dabbling in beer-making and tofu, the two decided to pursue a career in affinage. Mateo and his brother finished building the caves three years ago and have been conducting experiments ever since.
Jasper Hill's cheese has blown many other competitors out of the water. Winnimere, one of their alpine cheeses, won Best of Show at the American Cheese Society competition this August. Though their success is well-deserved, the Kehlers know cheese-making wisdom is acquired through years of trial and error. They have even partnered with Harvard University "to map and delineate the microbial climate on the farm." Who would've thought the blending of science and art could be so rewarding (and scrumptious)?
