Beer Pretzel Caramels
Most people see making caramels as a laborious, time-consuming endeavor, and that may be true when it comes to this recipe. However, the deep flavor of the beer and crunchy saltiness of the pretzels makes these caramels a step above -- and worth the effort.
Speaking of the reduction, it does matter what beer you use. Combining brown and pale ales is a good strategy; the idea is a balanced, dark flavor with pronounced hoppiness. When it all cooks down and gets added to the sugar, it becomes incredibly delicious.
