It's apple season, and we all know how wonderfully apples pair with cheese! Apple pie with cheddar, anyone?

Basic apple/cheese rules:

Gouda goes well with a tart apple.
Cheddar pairs best with a sweeter apple.
Bleu cheese works well with sweet apples, which can emphasize the tangy cheese.
Beware the flavored cheese. “I have an English cheddar with whole grain mustard seeds in it,” Persi says. “They wouldn’t go quite as well [with apples].”
