Americans More Sophisticated with Their Cheeses, Boosting Industry
Americans are becoming more discerning when they buy their cheese, which int turn is increasing demand for more diverse cheeses made in smaller batches by artisans and independent creameries. And, since Americans consumed on average 35.5 pounds of cheese and sold $18.9 billion of the stuff in 2011, this is kind of a big deal for an ever-evolving industry! ABC News has the story:
"Even traditional large production states like California and Wisconsin, known for their more commodity approach to cheese in the past, have embraced that smaller batch cheese, made by hand and with the highest attention to style and quality, is not only viable but what the consumer expects," said Greg O'Neill, president of the American Cheese Society and owner of Pastoral Artisan Cheese, Bread & Wine in Chicago.
