Comté + Fondue with Ihsan Gurdal in Cambridge, MA
These days, many people and companies in the United States sell fine artisan cheeses, but few have traveled as far and devoted as much effort as Formaggio Kitchen has to reach the world's best producers. Join Formaggio's owner, Ihsan Gurdal, as he illustrates this point with stories and samples from one of the shop's top lines of cheese - Marcel Petite Comté. The classic Alpine-style wheels from France's top Comté affineur are truly some of the world's best, but they didn't come easy. Ihsan will share tales from his years of pilgrimages to the Jura, letting you in on his quest to gain the respect and trust required to receive the highest quality wheels of Comté. Along the way, you'll sample the cheese at six different ages, ranging from young, milky-sweet Trois Sapins all the way up to extra-aged, extra-delicious Extra Grand Cru. (The latter is particularly special, as we're allotted only a few wheels each year around the holiday season.) You'll also taste them melted down in a big pot of Ihsan's trademark fondue, and he'll pair it all with his favorite wines.
