Dave Potter, owner and creator of Dairy Connection, from Madison, Wisconsin, will instruct a one-day advanced class for Californian commercial cheesemakers. Dave will be exploring the functional use of starter cultures and development of new flavors in cheese, looking at the latest discoveries in cheese taste profiles, textures and culture choice.

Where: College of Marin, Indian Valley Campus, Rm 154, Pomo Building
Cost: $80 California Artisan Cheese Guild members $100 non-Guild members,
Lunch and beverages are provided. Please feel free to bring cheese for the afternoon roundtable discussion.
