A luxuriant expression of the season's milk, Uplands Cheese's Rush Creek is a soft raw-milk cheese, wrapped in spruce bark and aged 60 days. Like its inspiration, Vacherin Mont d’Or, Rush Creek is meant to be served slightly warm, spooned from its rind.

Clare and Matt Stoner Fehsenfeld, of the Madison, Wisconsin-based jam company Quince & Apple, steep dried Mission figs in a blend of black Indonesian tea with just a touch of sugar. The result is the perfect blend of natural “figgy-ness” and gently spicy notes of tea.
