Global Cuisine in Mexican Hands

Reposting a video that came my way via Carlos Yescas: a rather pointed reminder of who's cooking in the kitchen.
Not only are Mexican immigrants supplying raw labor in restaurants in California—and around the country—but they're applying their skills to the dishes as master craftsmen. I'm reminded of Anthony Bourdain's typically unvarnished praise from Kitchen Confidential:
The Ecuadoran, Mexican, Dominican and Salvadoran cooks I've worked with over the years make most CIA-educated white boys look like sniveling punks.



It is amazing when talented
It is amazing when talented people come here legally from Mexico and show off their skills in the restaurants around the country. There is some really great talent out there. Thank you for sharing.
Mexican chefs are making an impact in California and around the country where jobs are available with their talent and their skills that are seemingly unmatched.
