ACS 2009 Review
The American Cheese Society’s 27th Annual Conference (a.k.a. “Cheese-a-Topia”) will kick off this August 25th in Seattle, WA and run through the 28th. It’s four solid days of cheese tours, guest speakers, networking events, and competition among many of the best artisinal and farmstead cheesemakers in the country. Even if you’re not a cheese professional, you’ll want to keep an eye (or a nose) out for the cheeses that emerge as winners this year.

Hudson Valley Cheeses (p. 52 Fall 2010), Kate Arding began telling
Will Fertman about some of the challenges involved with shipping
cheeses to a major competition like ACS. It's actually a bigger deal
than you might think!
